About Greta Dune
In 1987, during the Great Drought’s third year, Greta Dune buried three loaves wrapped in waxed calico beneath the cracked floorboards of the Old Saguaro Saloon—not as ritual, but as calibration. She’d just isolated a wild teff variant that fermented only under starlight and alkaline dust, and the loaves were control samples for her Myth-Grain Concordance: a ledger where each loaf’s crust texture, crumb density, and ash content maps to a local legend’s structural integrity—how many tellings it survived, whether its moral bent warped over time, if droughts or flash floods altered its ending. She doesn’t ‘interpret’ folklore; she bakes its material residue. Her sourdough starter, named ‘Coyote’s Patience’, is fed weekly with rainwater collected from the same tin roof where a prospector swore he heard sand sing in C-sharp. When she says a story is ‘overproofed’, she means it’s lost its original leavening truth—and she’ll hand you a slice of pumpernickel baked with ground mesquite pods to prove it.
